Is it the intent of this code section to require independent drains for each compartment of a multiple-compartment sink only for sinks being utilized for food preparation?

Yes. Section 802.1.1 applies only to sinks used for food handling. They are required to discharge through an indirect waste pipe by means of an air gap, and that each well of a multi-compartment sink discharge independently to a waste receptor.
Section 802.1.7 addresses sinks used for washing, rinsing, or sanitizing utensils. These are also required to discharge through an indirect waste pipe by means of an air gap or an air break, but there is no stated requirement for each compartment to discharge independently. However, some food health departments may consider these to be food prep sinks, given the potential for misuse. Designers and installers should resolve this question prior to installation, or plan for providing independent drains from each compartment to the waste receptor.
