Can a municipality require that if I install a hydromechanical grease interceptor, it has to be over 750 gallons?

No. Hydromechanical grease interceptors (HGIs) are designed to perform more efficiently than gravity grease interceptors (GGIs), and are sized using different criteria. Section 1003.3.5 requires HGIs to be sized per the standards indicated, and to have the grease retention capacity for the flow-thru rates indicated in Table 1003.3.5.1. GGIs must be sized by determining the peak drain flow in GPM, and multiplying by a 30-minute retention time. For any given design criteria, GGIs will always end up larger than the equivalent HGI.
Commentary
Any additional sizing requirements prescribed by the AHJ must comply with the process for local technical amendments per Section 553.73, F.S.
