Question
Is it the intent of Section 1003.3.4, Exception, to require each compartment of a multi-compartment interceptor to be between 750 - 1250 gallons? It seems the code and the Health Department rules may conflict

The correct section is actually 1003.3.5, not 1003.3.4. This section provides sizing criteria and referenced standards for hydromechanical grease interceptors, as well as for fats, oils and greases disposal systems, and automatic grease removal devices. That encompasses the vast majority of today’s grease interceptors.
An exception is provided for grease interceptors that are sized, constructed, and approved in accordance with Rule 64E-6, FAC, and that are located outside the building. These are commonly referred to as gravity grease interceptors. The purpose of this Florida-specific exception was to permit the continued use of traditional concrete interceptor tanks.

Commentary
The sizing and construction of concrete gravity grease interceptors in Florida is governed by the Health Department. The interpreting Health Department requirements are outside the purview of this committee and the local Health Department and/or serving utility should be consulted for additional guidance.
