Question

Is it the intent of this code to require TWO platforms, on each side of the appliance, and TWO guardrails, extending 30" beyond each end of the equipment, such as a rooftop restaurant exhaust fan on a sloped roof ?

Maybe. It would depend on where access is
required to service the equipment.
